GARUM TASTING

After learning about the technological processes of food production and preservation (salting) in Roman times, participants will participate in a technical tasting led by specialists who scientifically recreate Roman-era foods.
The course will delve into Roman-era culinary techniques, focusing on the characteristics of their cuisine; the main preparation processes; the role of garum within the corpus of recipes and how it is produced; the structures of Roman haute cuisine recipes; and the origin and evolution of Roman cuisine, with its heritage from the Etruscan and Greek civilizations.
